The Buka story

Mentor Shala

Buka opened in Espoo in 2021. The idea was simple: bring a restaurant to Espoo that cooks its meat the way it has always been cooked — over the fire of a charcoal grill and the low heat of a stone oven.

Permits for stone ovens and charcoal grills are rare in Espoo. Buka belongs to the small group allowed to cook the right way — slowly, without shortcuts.

At lunch you taste what it means to braise a beef cheek for sixteen hours in a stone oven. At dinner the à la carte runs to entrecôte, sirloin, and a tiramisu we make in-house. Each time the same idea: every plate should feel like care went into it.
