Why the lunch tastes different
Charcoal grill at 800°C
Every cut goes on the charcoal grill, which runs at around 800°C close to the meat. The surface caramelises in seconds and the meat stays juicy. A normal pan reaches 200–300°C, so the meat dries out before the crust is ready.
Stone oven, 16 hours
Beef cheek and pork neck braise in the stone oven for 16 hours overnight. The stone holds a moist heat, so the fat melts into the meat instead of out of it. A dry electric oven cannot do the same.

Permits for stone ovens and charcoal grills are rare in Espoo. Buka is one of the few restaurants allowed to use both.
